Copenhagen restaurant Noma is set to reopen next week under new leadership. Its star chef and co-founder, René Redzepi, stepped down and apologised after accusations of physical and psychological abuse. Pablo Soto, the incoming executive head chef, says the restaurant remains “the same Noma” but has undergone significant changes. The venue is introducing an evolving monthly menu and placing greater emphasis on allowing staff to lead full lives.
